I really like Elk Mountain. There is good terrain for all levels.
The mountain has more vertical than others in the area and the trails have interesting cuts. It is also a little off the beaten path, this translates to less crowds and smaller lift lines. For every advanced groomer, there is an advanced bump run. The area is also higher than some of the surrounding mountains. This makes it less susceptible to the thaw cycles.
I have two issues with Elk Mountain. First - the trails all have uncommon Indian names. I have trouble remembering (or even pronouncing) the trail names. Second – Elk is home to the slowest trail lifts still running. The lifts are well placed, and always seam to be running, but they are quite slow.
All in all, I think Elk is a much better choice than Camelback, Sno or any other mountain in the Poconos.
Elk is for the true skier. If you are looking for challenging trails, Elk is for you. Elk does not have shopping and other amenities, just great skiing
